special valentine’s dinner

well…..i’m not sure how you spend your valentine’s…but I usually spend the day preparing one of my hubbies’ favorite dinners…..i’ve just recently discovered that I can “tolerate” lamb chops…{if aaaallllllll the fat is removed first!} it certainly isn’t my favorite meal, but he loves them so much that it was worth the small sacrifice….

for the first time since living in our new home–  i’ve started to really enjoy cooking again…it was a very loooong 2 years of cooking most meals on a 2 burner hot plate in our living room, ugh!!! certainly glad those days are behind us now…

but, we still have 3 storage units filled with our things from our last place, so every week I unpack another bin or box and sort out where everything will belong in our new home…..several weeks ago, I was delighted to finally start bringing home a few of my “good dishes”…I hadn’t seen them in soooooo long, it felt like Christmas again! I decided the menu would be simple, but that I would serve everything on our pretty dishes to celebrate valentine’s day.

here is dinner…broiled lamb chops with mint chimichurri, roasted truffle oven fries and green beans….

and also my recipe for mint chimichurri, just in case you’d like to give it a try…enjoy!

mint chimichurri

1 cup fresh cilantro
1 cup fresh mint
1/2 cup fresh parsley
¾ cup olive oil
¼ cup apple cider vinegar
zest of one lemon
2 cloves garlic, crushed
salt, to taste
fresh cracked black pepper, to taste

put all ingredients in small food processor and

pulse until everything is minced well and combined.

use as a marinade and as a sauce for lamb.
